Having had both a 320 (albeit a bit tuned) and a 280 version of the W210 I can say without a doubt that the 320 is ALOT faster off the line and through the gears and the difference in fuel economy to the 280 is near to none. If you don't have to pay alot more for the 320 I'd say go for it instead
